4 oz chicken breast or extra-firm tofu, cut into 1/2-inch cubes
1/2 cup shredded cabbage
1/4 cup matchstick carrots
2 tablespoons chopped green onions, plus more for garnish
1 teaspoon sesame seeds, for garnish
For sauce:
1 tablespoon natural chunky or smooth peanut butter or powdered peanut butter
1 tablespoon low-sodium soy sauce or tamari
1 teaspoon rice vinegar or lime juice
1 teaspoon honey or maple syrup
1 tablespoon warm water
1/2 teaspoon grated fresh ginger or garlic
Crushed red pepper flakes, optional
Directions
Cook noodles according to package directions. Drain and set aside.
Heat oil in skillet over medium-high heat. Add chicken and sear on all sides until browned and cooked through, about 5-7 minutes. Remove from heat and set aside.
Combine reserved noodles, cabbage, carrots and green onions in large bowl.
Whisk together peanut butter, soy sauce, rice vinegar, honey, water, ginger and red pepper flakes in a small bowl until completely smooth.
Pour mixture over noodle bowl and toss to coat. Top with chicken and garnish with sesame seeds and additional green onions. Serve and enjoy.
