Ingredients:
For Burgers:
● 1 (14-ounce) can black beans, drained and rinsed
● 2/3 cup quick cooking oats
● 1 large yellow onion, minced
● 1 small green bell pepper, finely chopped
● 1/4 cup frozen corn, thawed
● 1/4 cup lime juice
● 1 teaspoon garlic powder
● 1 teaspoon ground cumin
● 1/2 teaspoon kosher salt
● 1/4 teaspoon freshly ground black pepper
● 4 sesame seed buns
● 1 large tomato, sliced
● Half head of bibb lettuce, leaves separated
For Sauce:
● 1/2 cup mayonnaise
● 2 cloves garlic, grated
● 2 teaspoons chopped chives
● 1/4 teaspoon kosher salt
● 1/8 teaspoon freshly ground black pepper
Preparation:
1. For Burger: Preheat oven to 375°F. Line a rimmed baking sheet with foil and lightly coat
with cooking spray.
2. Mash black beans in large bowl. Mix in onion, pepper, corn, lime juice, garlic, cumin, salt
and pepper. Let mixture rest for 5 minutes. Shape mixture into 4 patties and place on
prepared baking sheet. Coat tops of the patties with cooking spray and cook until
golden-brown, about 10 to 15 minutes.
3. For Sauce: Meanwhile, whisk together mayonnaise, garlic, chives, salt and pepper in a
small bowl. Spread sauce on both sides of buns. Top each bottom bun with a layer of
lettuce, patties, tomatoes and bun top. Serve and enjoy.
