Garlic-Parmesan Cauliflower Steaks

Serves: 4

Ingredients:

● 1 large head cauliflower

● 2 table spoons olive oil

● 2 cloves garlic, minced

● 1 teaspoon kosher salt

● 1/2 teaspoon freshly ground black pepper

● 1/4cupshreddedParmesancheese

● Chopped fresh parsley, optional, for garnish

Directions:

  1. Preheat oven to 425° F. Line baking sheet with parchment paper. Set aside.
  2. Remove outer leaves from cauliflower and trim stem. Place cauliflower firmly on cutting board, stem side down. Slice vertically, all the way through the cauliflower, at 1 inch intervals, creating thick cauliflower steaks.
  3. Combine olive oil, garlic, salt and pepper in small bowl. Coat steaks generously with olive oil mixture and place onto prepared baking sheet.
  4. Roast cauliflower until fork tender, about 15-20 minutes. Sprinkle with parmesan and bake for an additional 5 minutes or until cheese is melted.
  5. Garnish with parsley and serve.
